Activities
- Ancient Grains from Around the World: This unit introduces students to 9 grains from around the world–kaniwa, buckwheat, barley, quinoa, millet, rice, farro, oats, and wheat–and engages them in the process of seed to fork through each grain's story. This unit often coincides with school-wide taste tests of these grains. (See also: Healthy Eating)

- Tortilla Factory: This is a cross-curricular unit that uses corn as its underlying theme. Students follow corn, from seed to fork, while learning about its environmental, cultural and economic significance in the U.S. and around the world. Students grow their own corn in the school garden, and later harvest, grind, and form into tortillas which they share together.

- What the World Eats: This unit uses the book, What the World Eats by Peter Menzel and Faith D'Alusio, to engage students in a global exploration of food cultures. The book examines the food cultures of 30 families from 24 countries, and identifies various patterns in their research. Students use the book to first look outwards on our global food systems, before looking inwards to understand more deeply, "What (and why) the Island Eats".

- Salsa: This unit brings students from the garden back into the classroom, by exploring how salsa is made, and its cultural significance. As a cross-curricular unit, students explore the history and significance of salsa in Social Studies, the cultural significance in Spanish, the scientific and agricultural process in the garden, and finally, they complete the seed-to-fork cycle by making and enjoying the salsa together as a class.
